I've been drinking coffee since I was 15, and I drink my coffee black. I've tried every type of coffee prepared in every way that I could get my hands on. From siphon brewing to moka pots to good old fashioned drip. One time I made a smart coffee maker that activated when I turned on my lights in the morning.
One of the most applicable ideas that I've come across is adding salt to your coffee. Around 2010, I came across this study in Nature from June 1997 where they talk about enhancing coffee flavor by adding salt. The authors note that salt covers the bitter notes of coffee both better and with less volume added than sugar. I later learned it's also an old gourmet cooking trick. James Hoffmann would later make a brilliant YouTube video on this idea.
So try adding a pinch of salt to your black coffee in the morning. Or try sprinkling a little on top of your coffee grounds prior to brewing. I've found that both work.
